Keto Pizza Bowl

I love pizza. Always have, probably always will. When I found out there was such a thing as keto pizza, I was the happiest diabetic ever. Skillet pizza, fathead pizza, cauliflower pizza, chicken crust pizza, meatza, so many variations. However, they all involve quite a lot of prep time. I wanted something that killed the craving and didn't take 3 hours of "is the dough supposed to look like this??"

Pizza bowls are easy to do, this took me 20 minutes to put together. If you prep it the night before it would make an epic lunch at work - all you need is a microwave. Whatever your pizza preference is, if you like anchovies on your pizza, asparagus, artichokes, spinach, avocado, bacon... it all works.

Butter Roast Chicken

This is one of my favourite (and easiest) ways to do chicken for dinner. I came up with this while I was on holiday visiting family, I needed something that wouldn’t take too long to cook and would feed keto and non-keto people. Roast chicken is a staple in my house - it's a very flexible dish. I use this a lot with just Waide and I eating at home, but it's also really simple to upgrade for a dinner with friends/family.

Cheese & Garlic Savoury Muffins

Bread substitutes are something that every low carber seems to be on the hunt for. I've tried a few myself, they always just end up tasting like bird food. So I stopped trying. And then I had another accidentally genius baking moment. These muffins are not a bread replacement BUT they have a pretty good bread-like texture. They are great by themselves, or with butter, cheese or avocado. I've made these as large muffins, and in smaller moulds to make mini muffins, my next experiment will be mini bread moulds to see if they slice well. I hope you guys love this recipe as much as I do. 

How To: Skillet Pizza

Eating keto doesn't mean you are doomed to a pizza-less existence. There are a lot of options. If you are South African, there's col'cacchio, piza e vino, vovo telos and these are just the ones I can remember right now. If you aren't getting banting takeout in SA, you could make your own cauliflower pizza, fathead pizza, pizza bowl or skillet pizza. There are a lot of ways to get around the pizza issue. Skillet pizza is a quick, easy and amazing way of getting everything a traditional pizza has without the carbs; pizza toppings on a base of fried cheese.

This is not my original recipe, if you google "keto skillet pizza" you will find a lot of different ideas for this recipe... this is a simple step by step for something that is an easy keto meal.

Everything Quiche

Keto quiche, known in my house as Everything Quiche because it literally depends on what you have in your fridge, then you just put everything in. This is a super easy to make and easy to tweak recipe. I usually make these in single portions for lunches, and then accidental_keto_husband eats them before I get a chance. You could also put this in a larger pie dish (to eat immediately or freeze) and I'm 100% sure these would even work in muffin sizes. There are so many possibilities for this recipe. If you do it in a way I haven't thought of, new way to serve it or adding another ingredient that is amazing, please let me know in the comments!
